What you’ll do

You’ll dive (chopsticks, fork, spoon, whatever you want first) into the world of Tonkotsu ramen - a silky, rich, pork-bone broth with thin noodles - in Fukuoka, the city where this ramen style was born.

You’ll slurp your way around a few Hakata ramen shops (slurping is considered good manners, we promise) with one of our local Fukuoka hosts, discovering its quirks, history, and most importantly, sampling it.

You could try what’s endearingly referred to as “pig bone cappuccino” - although if broth simmered for 18 hours sounds a little too heavy for you, head to Ganso Nagahamaya, which is fondly referred to by locals as Gan-naga or Ganso, is known for its simple menu and quick service.

Here you could feast upon a simple dish of ramen while experiencing the restaurant's top-up noodle system. Bottomless noodles? Sign us up.

A perfect way to end off your ramen tasting experience is with a stop at Shin-Shin, which offers a less oily and heavy version of Tonkotsu ramen. By the end of the day we hope your belly will be extremely full, but your heart even fuller.
